Chorizo Quinoa Burgers

 This flavorful recipe would be great for camping, either made with a pan over the fire or grill, or thrown on the BBQ with the salsa as a topping. A versatile recipe, made with an easily found vegetarian meat option, this one will surely delight and tickle those summer taste buds!

 
 

Ingredients

 

 

For the patties

 

1 lb. pre-cooked Chorizo (or Vegan Chorizo)

1 c. refried Black beans

½ cup chopped Green Onion

¼ cup cilantro

1 ½ c. Cooked Rainbow Quinoa

1/4 tsp. Sea salt [if desired]

2 tsp. Crushed garlic

Red chili pepper flakes (optional)

 

For the sauce

 

½  c. Garlic Chipotle Salsa or similar salsa

METHOD

Thoroughly combine the ingredients for the patties in a large mixing bowl.

 

Place a large skillet on medium heat with your choice of cooking oil coating the bottom, or fire up the grill.

 

Scoop up the mixture in 1/3 c. increments (or smaller in you prefer) and form them into patties (give or take, 8-9) onto the skillet or grill (if grilling, may be helpful to cook on a wooden grilling board, as these are much softer patties than your typical burger patties… but with tender care, they can certainly hold up on the grill!)

 

If cooking in a pan, after a few minutes, add the salsa into the skillet, cover the pan, and allow to cook for ten minutes, carefully flipping them every 3-4 minutes.( If cooking on a grill, watch your patties and turn after 3-4 min on each side. Be gentle, as they may be more difficult to turn than typical burger patties) Re-shape as necessary.

 

After flipping over the patties, reduce the heat to medium-low, and let cook for another five minutes until semi-firm and heated completely through.

 

Top with extra salsa, [melted cheese] and avocado, then enjoy!
