Fried Ruby Red Rice with Mushrooms, Peas and Cilantro

 This fried rice recipe is nice and easy in that it doesn’t require eggs like its take-out cousin– throw together some Ruby Rice with these fresh ingredients and liven up your Asian cuisine.

 
 

Ingredients

1 cup fresh cilantro sprigs

4 scallions

1 cup fresh snow peas

1 cup preferred mushrooms

3 tablespoons vegetable oil

4 cups cooked Ruby Red Rice

1 tablespoon rice vinegar

1 tablespoon soy sauce

METHOD

Chop cilantro and mushrooms, as well as thinly slice scallions.

 

In a large nonstick skillet, sautee mushrooms in oil over moderate, stirring occasionally,  about 2-3 minutes.

 

Add rice and fry, stirring occasionally, until heated through.

 

Add vinegar and soy sauce, stirring to coat rice, and stir-fry until liquid is evaporated. Stir in cilantro, scallions, and peas and stir-fry until heated through, seasoning with salt if necessary.
