Quinoa Banana Bread Pudding

1 Cup cooked Alter Eco Royal Pearl
1 Cup Almond Flour
1 1/2 tsp Baking Powder
1/2 tsp Salt
1/3 cup 100% Liquid Egg Whites
1/2 cup Unsweetend Vanilla Almond
1 tsp Pure Vanilla Extract
1 tsp Ground Cinnamon
1/4 tsp Ground Nutmeg
3 Ripe Bananas
1/4 cup 100% Pure Maple Syrup
1/4 cup Walnuts, chopped
1. Preheat oven to 350 degrees F. Lightly butter or oil a 1 1/2 quart baking dish.
2. Mash one banana, chop a second and reserve the third to slice for serving.
3. In a large bowl combine egg whites, mashed and chopped banana, cooked quinoa, almond milk, vanilla extract, maple syrup, cinnamon and nutmeg. Add salt, baking powder and almond flour, stirring just until combined.
4. Pour batter into prepared dish and bake for 30-35 minutes, or until toothpick inserted comes out clean. Serve warm or chilled topped with remaining banana sliced, chopped walnuts and extra maple syrup, if desired.
Delicious topped with fresh blackberries or Alter Eco chopped dark chocolate bar!
