These little bite-sized quinoa falafels finally lend a hand to those just dying for something else coated in/made out of hummus… and pack in that quinoa-protein too!
- 1 cup cooked quinoa
- 1/2 – 3/4 cup hummus
- green onions
- 1 egg
- oil for frying
1. Mix all ingredients together (except the oil) and chill in the fridge for an hour (or the freezer for 20 min)
2. After chilled, form little ping pong sized balls out of the mixture- fry them in 2in of oil (canola or vegetable) until golden brown
3. Serve with hummus or top with some Greek yogurt and hot sauce!
