Rainbow Quinoa Cakes

These little cakes are as delicious as they are adorable.  Easy to make and quick to impress, these could be just as perfect for breakfast as they would a dinner party

 
 

Ingredients

-2 cups cooked Alter Eco quinoa
-4 large eggs
-1 cup diced onions + extra for sauteeing
-1/4 cup shaved parmesan + extra for garnishing
-EVOO for frying 

METHOD

 
 1. Mix quinoa, eggs, onions and parmesan in a large bowl.
 2. Hand-form little patties/cakes and pan fry in EVOO until golden brown on both sides
 3. Top with sauteed/grilled onions and extra parmesan
