Tropical Salsa Jasmine Rice Salad

A burst of flavors, this salad makes for one delicious gastronomical trip. Starting with the fragrant Hom Mali Jasmine rice, the mango, papaya, and pineapple chunks combine with cilantro and jalapeño to create a deliciously sweet and spicy side dish.

 

 
 

Ingredients

 6 cups cooked jasmine rice (2 cups uncooked)

1 1/2 cups pineapple (diced– fresh or canned in natural juice) 

3/4 cup diced papaya (fresh)

3/4 cup diced mango (fresh)

1/2 cup diced red onion

1/2 cup diced red bell pepper 

1 jalapeño pepper (ribs and seeds removed–add more according to preference)

2 finely chopped scallions

1 tsp fresh lime juice

1 tsp minced garlic

2 tbsp finely chopped fresh cilantro 

salt and pepper to taste

METHOD

 

Prepare 2 cups of rice according to package instructions– this should yield around 6 cups cooked rice. Set aside to cool.

 

Combine the onion, bell pepper, jalapeño, scallions, lime juice, garlic and cilantro in a medium sized bowl. Stir in the fruit until all is coated well.

 

Combine previous ingredients with the rice, one cup at a time. Fully incorporate.

 

Add salt and pepper to taste. Enjoy!
