Paleo Superdark Truffle Stuffed Cookies
Our newest Superdark Truffles are so delicious on their own, but we couldn't resist the opportunity to bake with them. The result is the most perfect paleo, gluten-free, chewy, chocolate-y cookies! Recipe by the talented Real Food with Jessica.
1 cup almond flour
2 tablespoons coconut flour
1/3 cup coconut sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup melted refined coconut oil
1 large egg (sub flax egg to make it vegan)
5 Superdark Truffles, cut in half
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper. Set aside.
- In a large bowl, combine almond flour, coconut flour, sugar, salt and baking soda. Mix well. Add in the coconut oil and egg and stir until dough forms.
- Divide into 10 equal portions and roll into balls. Flatten ball and place half of a truffle in the middle and wrap the cookie dough around it. Flatten slightly and place on the cookie sheet. Repeat with remaining dough and truffles.
- Bake for 10 minutes and then enjoy warm for the gooey center
