Strawberry Mint Chocolate Fat Bombs
These Keto-friendly Strawberry Mint Chocolate fat bombs are the perfect guilt-free treat or anytime snack.

3 Tablespoons of Coconut Oil
½ teaspoon of vanilla (if desired, for sweetness)
¼ Cup Coconut Milk
1 large or 2-3 smaller strawberries, diced
- Melt the chocolate and coconut oil together in the microwave in 20 second increments, stirring frequently so it doesn’t burn. Remove from microwave. Stir in the vanilla, if desired.
- Pour mixture into cupcake molds and freeze for 15-20 minutes.
- Meanwhile, microwave the coconut milk and strawberries together for 30 seconds. Muddle the strawberry with a spoon or fork (some chunks are ok).
- Remove the chocolate mixture from the freezer and place the strawberry mixture on top. Freeze for 20 minutes to harden. Enjoy!
