Chocolate Coated Peanut Butter Banana Popsicles

Beat the heat this summer with homemade fudge popsicles! A yummy treat, minus all the sugar packed normally packed into store-bought popsicles (not to mention high fructose corn syrup and artificial flavors). Made with just a few vegan and organic ingredients, they're a great healthier option to cool down on the hottest of days. Added bonus - they're almost as fun to make as they are to eat!

Popsicle

  • 1 ½ cups almond milk
  • 2 ripe bananas
  • ½ cup smooth organic peanut butter
  • ¼ tsp salt
  • 1 teaspoon maple syrup

Toppings

 

Directions 

In a blender, add the almond milk, bananas, peanut butter, salt and maple syrup. Blend until smooth. Pour into the popsicle molds and freeze until firm.

Line a baking sheet with parchment paper and place in the freezer.

Combine the chocolate chunks and coconut oil in a small bowl and melt in the microwave until smooth.

Remove the popsicles from the molds and dip them into the melted chocolate. Sprinkle with peanuts and sea salt. Place the popsicles on the prepared baking sheet in the freezer. Let the popsicles cool for 20 minutes before serving.
