Mint Chocolate Whoopie Pies

Mint Chocolate Ice Cream Woopie Pies.. need we say more? These delicious vegan pies, made with our newest 90% Dark Mint Crisp bar are delightfully fluffy and oh-so-soft in the middle. Use mint chip ice cream for the most satisfying minty cool bite for a hot summer day!

1 cup all purpose flour

1/4 cup cacao powder

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/3 cup apple sauce

2/3 cup cane sugar

1/4 cup water

1 bar Alter Eco Superdark mint crisp chocolate - chopped



Preheat your oven to 350F and line a baking sheet with parchment paper. In a medium sized bowl, whisk together the flour, baking powder, baking soda, cacao powder, and salt and set aside. In another bowl, combine the sugar, apple sauce, and water. Add the wet mixture to the dry, folding in your chopped chocolate. Scoop about 2 Tbsp worth of batter onto your baking sheet, or use a cookie scooper, and allow them to bake for about 20 minutes. Let them cool before filling with ice cream - ya don’t want it to melt!
