Vegan and Gluten Free Ube Bites

These Ube Bites are the perfect healthy treat - they're vegan, gluten free, soy free and nut free! Recipe by the talented Peanut Head.

Ingredients

  • 5 tbsp coconut butter
  • 2 tbsp coconut sugar cooked into a syrup with 1/3 c water
  • 2 cups steamed then cooled ube potato (purple yams)
  • 3 tbsp cacao nibs
  • 1 2.82oz bar of Alter Eco Blackout Chocolate
  • 1 tbsp coconut oil

Directions

  1. In a food processor blitz your ube until you've reached a smooth consistency. While your processor is running slowly add in your coconut butter and sugar syrup. Your mixture should now be thick and smooth

  2. Fold in your cacao nibs and spoon out the mixture with a cookie scoop of tablespoon and roll into small even sized balls. Lay onto a tray lined with parchment paper and place in the freezer for 20 minutes

  3. In a double boiler melt down your chocolate bar with 1 tbsp coconut oil (this helps make the chocolate more manageable and "dippable"). Let the chocolate cool just slightly so it's not boiling hot when dipping

  4. Remove your chilled balls from the freezer and with a fork scoop them up one by one and drop into the melted chocolate, coat the balls completely and carefully place back onto the parchment paper. Using a fork helps excess chocolate drip off so you get an even coating. Once all of your balls are coated place back in the freezer for 10 minutes to allow chocolate to harden.

  5. Remove from the freezer and enjoy! Balls can be kept in an airtight container and kept in the fridge for when the time calls for a quick treat.
