Pumpkin Oat Bars
November 04 2021Just in time to use those leftover Halloween pumpkins, these Pumpkin Oat Bars are a delicious fall treat for anytime of day!
Ingredients:
- 1/4 cup pumpkin puree
- 1 cup Pearl Heirloom Quinoa
- 3 cup Rolled Oats
- 1/2 cup Honey
- 3/4 cup Peanut Butter
- 1 Alter Eco Burnt Caramel bar - 70% cacao
Directions
- Preheat over to 400
- Cut and scoop the insides of the pumpkin
- Roast the pumpkin for 50 minutes and then let cool
- Peel off the pumpkin skin and puree the flesh in a blender or food processor
- Cook the quinoa according to the package directions
- Combine the quinoa, oats, honey, puree, and peanut butter in a large bowl
- Press the quinoa mixture into a 9x9 pan lined with parchment paper
- Melt one bar of Alter Eco Burnt Caramel Chocolate
- With a spoon, drizzle the melted chocolate over the top of the pressed mixture
- Refrigerate until chocolate has cooled and cut into squares
