Pumpkin Oat Bars

Just in time to use those leftover Halloween pumpkins, these Pumpkin Oat Bars are a delicious fall treat for anytime of day!




  1. Preheat over to 400
  2. Cut and scoop the insides of the pumpkin
  3. Roast the pumpkin for 50 minutes and then let cool
  4. Peel off the pumpkin skin and puree the flesh in a blender or food processor
  5. Cook the quinoa according to the package directions
  6. Combine the quinoa, oats, honey, puree, and peanut butter in a large bowl
  7. Press the quinoa mixture into a 9x9 pan lined with parchment paper
  8. Melt one bar of Alter Eco Burnt Caramel Chocolate
  9. With a spoon, drizzle the melted chocolate over the top of the pressed mixture
  10. Refrigerate until chocolate has cooled and cut into squares
