1 tsp vanilla extract
1/4 cup coconut oil, melted.
1/2 cup coconut sugar
1 ½ cups almond flour
¾ bar of Alter Eco 85% Cacao Orange Blackout, coarsely chopped
Preheat the oven to 350 degrees F.
Line a large baking sheet with parchment paper
In a large bowl, whisk together the egg, melted coconut oil, coconut sugar and vanilla extract until well combined.
Stir in the almond flour, mixing out any clumps, until a dough forms. Fold in dark chocolate chunks.
Drop 2 tbs of dough for each cookie onto the parchment. These will not spread much. Bake for 11-13 minutes, or until the edges are golden brown.
Allow to cool on the sheet for 10 minutes before transferring to a wire rack to finish cooling.
